Cilantro Cole Slaw
A nice simple and refreshing recipe for you. Laviyah came up with this when she made the Wish Tacos!.
Here are the ingredients:
- 3 cups pre-shredded coleslaw blend
- 1 1/2 cups fresh cilantro – rough chopped
- 1/2 teaspoon sea salt
- 1/3 cup fresh lime juice
- 2 tablespoons turbinado sugar
- 1 tablespoon Extra Virgin Olive Oil
- 1 teaspoon cumin
- 1 tablespoon diced green chilies
In a small bowl add everything except slaw and cilantro. Blend well with a wisk.
She used Trader Joe’s brand for the green chilies. They had a little bit of heat, but it was balanced very well by the other slaw ingredients.
In separate, larger bowl add slaw and cilantro. Pour liquid mixture in and mix together.
And there you have it…Cilantro Cole Slaw. I must tell you, I love this cole slaw recipe. I really don’t like traditional, mayo based slaw. But this version is awesome. I could eat this stuff by itself all day long. Use this as a side dish or to enhance your favorite sandwiches or tacos.
